Down this way we call it Fat Tuesday. I spent the day making gumbo for a Fat Tuesday luncheon at work. My side of Florida isn't part of the Mardis Gras tradition - that's the panhandle - but having spent several years stationed in Biloxi, Mississippi, I'm an adopted Cajun. We also have a few transplants in our organization which we'er using as our justification for a last fling before Lent begins.
